  • Chestnut: Classic stem and cap mushrooms which are edible to the stem. Chestnut mushrooms are high in antioxidants and pair well with dishes that contain poultry and vegetables. Also makes a delicious mushroom gravy.

  • Lion’s Mane: Experience flavors of lobster with a floral essence. This mushroom's chewy texture retains moisture well when cooked. Best served sliced into pieces, battered and fried, or cooked with a variety of sauces. Use in meat-free mushroom crab cakes, or as a side dish with butter, onions, and spices.

  • Blue Oyster: When cooked with butter, salt, and pepper, these very firm and meaty mushrooms have a seafood taste with a slight hint of anise or tarragon. Blue oysters are a versatile mushroom that can be added to your favorite pizza or sautéed with onions as a side dish. The best way to prepare Blue Oysters is to separate the stem base from the stem and cap using a knife or kitchen scissors, then the mushrooms should be torn from the cap to the stem rather than cut. Stem bases make an excellent addition to soup stocks as well.

  • King Blue: These mushrooms bear a striking resemblance to the blue oyster mushroom but are slightly more chewy and a little softer with a sweeter anise fragrance. King Blue mushrooms can be eaten down to the steam base and can be torn or sliced...only a marginal amount of the stem base needs to be removed. King Blues can be used in a very wide variety of culinary dishes and are very well suited for all kinds of pasta, cream sauces, and soups.
